Wild fermentation

We are so proud of the living cultures in our bottles, we don’t heat treat or pasteurize our drinks. Keeping our fermentation alive and wild is the perfect environment for the yeast and bacteria to take over and produce an intriguing palette of flavours and aromas that characterize our drinks. Fruity with slightly sour notes, complex and refreshing. Not that we can sit back and relax. We’re constantly monitoring our brews to control and optimise fermentation conditions, making sure mother nature goes wild without going too crazy….

Note that our drinks always need to be chilled, because if all of that life gets over excited it will burst out!
